Evie's Favorite Monterey Chicken

I am not a cook and I don’t claim to be. I do my best and I will try my hand at just about anything that looks good on Pinterest. Sometimes they don’t always turn out for the good but this one is spot on! Its a favorite all around my house so I have dubbed this one, Evie’s Monterey Chicken because this one is just the way she likes it. You can’t really go wrong with cheese, bacon, tomatoes, and chicken. For her it’s a win-win all the way around.

It’s a quick, easy to put together a meal, and its even Morgan proof so you are bound to succeed! I promise when you pull these little babies out of the oven your entire family will be drooling over them!

Here is what you will need:

INGREDIENTS

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 cup barbecue sauce (if you want to make it healthy use sugar free BBQ sauce. We use this one from Amazon https://amzn.to/3cWAxBK )
  • 1 cup shredded cheese I used a blend of Monterey Jack and cheddar cheese (or use Fat-Free American Cheese)
  • 4 slices bacon cooked and crumbled
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions

INSTRUCTIONS

  1. Heat the olive oil in a large oven safe pan over medium high heat. Preheat the oven to 400 degrees.
  2. Season the chicken on both sides with salt and pepper to taste.
  3. Cook the chicken for 4-5 minutes on each side, or until done. Cook time may vary depending on the thickness of your chicken. (Or, as my family prefers, you can grill the chicken instead of cooking it in the oven. It gives it a rich, juicy flavor)
  4. Once your chicken is cooked, pour the barbecue sauce over the chicken. Sprinkle 1/4 cup cheese over each chicken breast.
  5. Place the pan in the oven for 3-5 minutes, or until cheese is melted.
  6. Sprinkle the bacon, tomatoes and green onions over the chicken and serve.

That’s all there is to it! We like to add a side of steamed broccoli and pasta salad with fat-free dressing to finish it off. The kids love it and the husband loves it so its a total win in our house! Hope yall enjoy it!
